It's been said that no spice is more special than saffron. The singular most labor-intensive and costly to produce spice on the planet — saffron is a delicacy with a unique floral scent and complex, somewhat honey-like flavor that blurs the line between sweet and savory. In a remote region of Morocco, near the town of Taliouine, is where Casablanca Market's saffron emanates. In this almost ideal climate, punctuated with particularly warm summers, bitter cold winters, and a volcanic-like soil, the local farmers are able to produce some of the world's finest saffron threads.
Each of the multiple production stages are done by hand, by mostly female workers, who have passed down the skills from generations prior. Harvest is only a scant month each year in the late fall, when the raw saffron is extracted from the lilac-colored flowers. It takes 150 of these flowers to yield but a single gram of the precious saffron threads.
